Peanut is a valuable oil crop. Peanut oil is obtained from peanut fruits, where its content reaches 65% of the weight.
Like many other oils, peanut oil is obtained by double-pressing: cold (oil yield — up to 30%) and hot. The resulting oil is filtered and can be refined. Untreated peanut oil has a red-brown colour, distinct taste and smell, and is used in Oriental and Asian cuisines. The refined oil has a light yellow color, moderate taste and smell.
Peanut oil has high nutritional value, contains easily digestible fats, essential amino acids, vitamins A, E, B, potassium, magnesium, calcium, phosphorus and other macro- and microelements. It also contains phytosterols, phospholipids, polyunsaturated acids.
In addition to cooking, it is often used in cosmetology.
