Olive oil is a vegetable oil derived from the fruits of olive trees. It is classified into three varieties depending on the pressing and refining procedures:

• natural oil — oil obtained only by physical methods without chemical purification

• refined oil — oil that has undergone the procedure of physical and chemical cleaning

• olive-pomace oil — oil obtained from raw materials that have undergone the procedure of physical pressing, using organic solvents and under the influence of temperature.

At the international level, the International Olive Council deals with issues related to olives. According to its standards, there is a classification of oil into Extra-virgin olive oil, Virgin olive oil, Pure olive oil, Olive oil, Olive-pomace oil, and Lampante oil. The oils marked in this way differ by their extraction, degree of purification, composition, taste, and acidity.

Olive oil is a landmark product in Mediterranean cuisine and is widely used throughout the world in cooking, cosmetology, and soap-making.
