Coconut oil is vegetable oil obtained from copra of the mature coconut fruits. There are two ways of producing coconut oil:
Cold pressing — extracting oil by pressing cold raw material. It allows to extract no more than 10% of the oil and retains all the useful properties. Coconut oil of cold pressing has Virgin Coconut Oil marking.
Hot pressing — assumes preliminary heat treatment of coconut meat.
The resulting oil undergoes the purification procedure. Cold-pressed oil is most often subjected to only physical purification and is called unrefined (or raw). The stages of the physical purification method are sedimentation, filtration, and centrifugation.
The physical-and-chemical method of purification includes hydration, bleaching, and deodorization. The resulting oil is called refined and has a less noticeable taste, colour, and flavour than unrefined oil.
More than 80% of coconut oil is composed of saturated fatty acids: lauric, myristic, palmitic, oleic and other. Coconut oil is rich in phytosterols, vitamins E and K, calcium, iron, and zinc.
Both coconut oils (refined and unrefined) are used in cooking and cosmetology.
