Rye is a grain crop cultivated mainly in the Northern Hemisphere. The most widespread in the world agriculture species of rye has about 40 varieties.

Rye is a winter-hardy crop, so it is grown in spring and winter form. Winter rye has a higher yield than spring rye, so it is much more widespread. Spring rye is used in the northern regions, where winter rye cannot withstand low temperatures, as well as an insurance crop against the loss of winter crops.

The largest cultivated areas of this grain crop are in Germany, Russia, and Poland.

Rye grains are milled to produce rye flour of several species depending on the milling method:

  • Patent rye flour — finely chopped grains without shell;

  • Medium rye flour — flour made of grain, cleared of the main shell;

  • Dark rye flour — containing all the particles of whole rye grain.

In addition to flour, rye is used to produce starch, rye kvass, and alcohol.

Rye grain consists of 8-20% protein, which contains important amino acids such as lysine and trionine. Rye is rich in vitamins A, B, and E, as well as minerals such as potassium, magnesium, phosphorus and calcium.
